TruRoots Provencal Sprouted Lentil Salad

A taste of south eastern France using TruRoots Sprouted Lentils, red bell pepper, onion and spices.


1 cup TruRoots Sprouted Lentils
1 small red bell pepper, seeded and finely diced
1/2 finely diced red onion, chopped
¼ cup chopped fresh flat-leaf parsley
2 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
1 teaspoons chopped fresh sage
1/2 teaspoons salt
1/4 teaspoons ground black pepper


Cook TruRoots Sprouted Lentils according to package directions. Drain well.

Combine warm lentils bell pepper, red onion, parsley, oil, vinegar, sage, salt and pepper in a medium bowl. Toss well. Cool to room temperature before serving.
