Simple Quinoa Casserole

A savory cheddar-topped casserole with a healthy base and plenty of meatless protein. Surprise your friends at the next pot-luck event!

1 diced onion
2 chopped green peppers
2 cans Italian diced tomatoes
1 can corn
1-2 cans black beans
1 cup cooked TruRoots Quinoa topping
1/2 cup sour cream
1/3 cup canola mayo
1 cup medium cheddar cheese

Drain juice from tomatoes and add more water to equal 2 cups of liquid. Use this liquid to make Quinoa according to directions. While Quinoa is cooking saute onion and peppers. In a separate bowl mix sour cream, mayo and cheese and set aside. When Quinoa is done cooking add corn, beans, tomatoes, and peppers. Spread mixture into a 9×13 pan. Drop cheese mixture by spoonfuls and spread evenly over the Quinoa. Bake at 350 for 25-30 minutes or until topping is golden brown. This is a great dish for using quinoa and for rotating your food storage.
