Kickin’ Quinoa Salad

Add a Wasabi kick to your next Quinoa salad! This is a wonderful fusion recipe and not or the faint of heart!

Ingredients
1/2 cup uncooked TruRoots Organic Quinoa
1 cup water
1/4 cup chopped celery
1/4 cup mayonnaise
1 tsp wasabi powder
2 tsp lemon juice, or to taste
salt/black pepper to taste
1 (6 oz) can high quality tuna
1 whole Hass avocado diced

Preparation
Combine quinoa and water in a microwave safe bown. Cover and cook in the microwave on hight until the water is absorbed and the quinoa is tender. About 9 minutes. Uncover and place in the refrigerator to cool. Combine the celery, onion, mayonnaise, wasabi powder, lemon juice, and seasonings to taste. Gently fold in the tuna,avocado and chilled quinoa.
