Black Bean Quinoa Salad

As a compliment to fajitas, tacos or just about any Southwest or Latin American dish, this salad packs a zesty punch.

Ingredients
1 cup TruRoots Organic Quinoa
2 cups water
1 pat of butter, melted
2 tsp grated lime zest
2 Tbsp fresh lime juice
1 tablespoon olive oil
1 teaspoon sugar
1 can (14.5 oz) black beans, drained & rinsed
1/4 cup diced red pepper
1/4 cup seeded & diced cucumber
1 roma tomato, chopped
1/4 cup fresh chopped cilantro
Salt and pepper to taste

Preparation

Bring quinoa and water to boil, simmer on low heat for 20 minutes. Cover & let stand 5 minutes
Stir in pat of butter to quinoa
Let quinoa cool to room temperature, transfer to a serving bowl
Whisk together lime zest, juice, olive oil & sugar
Add red peppers and tomato to pot
Drizzle with the lime mixture and toss gently
Fluff with a fork.

Add cilantro & serve.
