Asian Quinoa Salad

This is a restaurant-quality Asian fusion salad that is ready in less than 20 minutes. For a creative journey and a wonderful entree, look no further.

1 1/2 Cup Water 3/4 Cup uncooked Quinoa 2 Cup Chicken, cooked, chopped 1/3 Cup green onions, chopped 1/4 Cup pistachios or almonds, chopped 1/3-2/3 Cup dried pineapple, chopped 1 Tbsp Toasted Sesame Oil 1 1/2 tsp ground ginger 1/2 tsp cumin 1/2 tsp salt 1/4 tsp crushed red pepper

Boil water, add quinoa, cover & reduce heat for 12 mins. Rest for additional 4 mins after cooking. Roast nuts in skillet over med high heat until lightly toasted Transfer nuts, quinoa, and remaining ingredients to bowl. Toss to coat. Chill for 2 hrs before serving.
